Homemade Chai Tea
I had my first chai when I went to school in India for 2 years. It was so sweet, I loved the taste but felt very health conscious about eating so much sugar and cow milk - so I avoided it for a while. Also, black tea tends to make me nervous.
There are great health benefits to the spices contained in chai, one for example is that they strengthen your immune system. I properly learned making chai from an excellent ayurvedic chef, Daniella Wolff. She makes the chai traditionally with raw cow milk which tastes delicious. I personally made the choice to not consume animal products to lessen the suffering for those animals. I generally sweeten everything with dates as I feel it is the most natural form of sweetener and therefore provides the most benefit to the body. Sometimes I use honey because it works better with a recipe and has great health benefits as well.
ingredients​

2 cups of fresh water

2 cups of vegan milk

1 spoon of freshly grated ginger

1 spoon of cinnamon

1 spoon of freshly ground cardamon

1 spoon of honey

additional optional spices: cloves, black pepper, anise, turmeric
directions​

Boil the spices and water covered for about 15-20 min.

Then add the milk, bring to a very short boil.

Take it off the heat and pur through a sieve to get the spices out.

Add honey and drink or refrigerate for the next couple of days.
